Notch 8

Notch 8 was brewed together with our friend, and skilled home brewer, Espen Westum in 2022, destined for a long rest in bourbon barrels. After three years, we decided to “double‑oak” it, transferring the beer into a new set of freshly emptied bourbon barrels to deepen its complexity. The result is a rich barleywine, layered with vanilla and oak from nearly 40 months in wood and intertwined with caramel and dried‑fruit notes developed through slow oxidation, all finished with a luscious mouthfeel. For the best experience, serve at 12–14°C.
