Mosteiro Brewery
Mosteiro Cervejaria was inaugurated in May 2017, but its history began much earlier, more than 30 years ago, by the Copi family.
Hops, water, barley malt and yeast.This is the Copi family mantra.
Passionate about fine cuisine and eager to explore the tastes of Brazil and the world, they discovered in the 1980s, when little was known or available in the country, that there was a great variety of beers.
(at that time, craft beers did not yet exist)
The family then went on a pilgrimage:
With palates open to new experiences, they explored countless breweries in European countries; dedicated themselves to visiting the nascent craft beer producers in Brazil; adopted Santa Catarina (the birthplace of craft beer in the country) as a frequent destination; refined their tastes and endeavored to understand the importance of the German Purity Law.
That's how passion defined a vocation. They adopted the modus operandi of craft beer, participated in production courses, acquired equipment, and practiced home brewing.
They dreamed, studied, planned, and achieved.
Developed over three decades, Mosteiro Cervejaria emerged with a meticulous and innovative proposal in São Carlos to produce quality beers and spread the culture of craft beer in the central region of the State of São Paulo.
In a single space, they provide a complete experience of craft beer making and consumption, harmonized with the rich international cuisine presented on the event space's menu. In addition to being committed to spreading craft beer culture in the interior of São Paulo state, Cervejaria Mosteiro is dedicated to caring for the environment by practicing 'clean manufacturing processes'.
Mosteiro reuses water and steam generated in production, separates and properly disposes of solid waste, and also maintains two rainwater filtration stations at its headquarters – even though municipal legislation only requires one.
The doors of Mosteiro Cervejaria are open to welcome those who share this special taste and also to encourage newcomers to immerse themselves in the wonderful world of craft beer.

Why Mosteiro Cervejaria?
Maintaining traditions is another passion of the Copi family, and the name chosen for the brewery reflects this aptitude. Mosteiro Cervejaria (Monastery Brewery) recalls a 4-century-old tradition of beer production by Benedictine monks of the Cistercian Order of the Strict Observance, or, in simpler terms, the Trappist Order.
One of the fundamental principles of the Trappist order is 'Ora et Labora' (Pray and Work). Even today, monks in monasteries are allowed to produce various items to support themselves and social causes, including beer.
Trappist beers belong to the abbey family, mainly consisting of blonde, dubbel, and trippel beers. All true Trappist beers should have the "Authentic Trappist Product" seal on their labels.
The names of Mosteiro Cervejaria (Monastery Brewery) do not follow Trappist production rules, but the name chosen by the Copi family was another way to preserve traditions and spread the culture of craft beer in the central region of the state of São Paulo.
