Our beers are influenced mostly by Belgian and American craft styles, but the addition of premium ingredients such as fruits, spices or wild yeast strains sometimes causes the beers to defy traditional categories. Our barrel aging program features a wide variety of beers aged in wine and spirits barrels, ranging from a Rye barrel-aged Mexican Chocolate Stout to a wild yeast-fermented Saison aged on Missouri wine grapes in French oak wine barrels. We strive to always achieve balance with each of our recipes, making our beers exceptional with food.
Sweet and malty with some toffee, prunes, vanilla, figs, oak, bourbon, hints of rye and earthiness. Quite intense and heavy complex slow sipper.

Dark Mahogany body with a low off-white head. The nose features roasted malt, grapes, honey, white wine and booze. Lots to taste here - apricots, dates, molasses, berries, sour mash and some hops for balance. There is a slight boozy burn over time. This is a pretty way out mix that really works for me.

Black with a large foamy brown head that faded quickly. Boozy with cocoa and strong coffee. Long finish. Moderately full bodied.

13 September 2025. At 17de Brugs Bierfestival. Cheers to the whole crew!
From the Stacks stand. Intense maple syrup, dark fudge, vanilla, bourbon. Very sweet maple syrup, caramel, chocolate sauce, undercurrent of berries. Herbal & earthy hops, maple, bourbon alcohol. Full body, viscous texture, soft carbonation. Not super complex but definitely delicious.

Bottle thanks to the adventures of Stuu in Chicago.
Appearance - opaque jet black, thin crema head.
Nose - green coffee bean, green pepper and earthy with dry chocolate.
Taste - much more chocolate, creamy and just a hint of that green note lurking.
Palate - medium to full bodied, creamy middle and sweet finish.
Overall - good. A bit of a chocolate bar. A bit sweet, a bit confected but good.
