It took years of hard work, but in the summer of 2002 PVB began full production operations at the new site on South 1st Ave. Once the brewery was set up and functioning, work began on the rest of the main floor of the building to create a comfortable atmosphere for the pub. The amount of work needed was unbelievable. A great deal of structural work was required before crafting a suitable atmosphere befitting a brewpub (restaurant + brewery). The pub needed to be comfortable and appealing, and Penny wanted to be able to provide live entertainment suitable for the tastes of her clientele. At the same time work was being done to prepare the place for on-site consumption, the volume of beer going out the doors in kegs and growlers from the tasting room was increasing exponentially.
As Portneuf Valley Brewing's presence in the market grew, so did the staff required to keep things running smoothly. Finally, in October of 2005, the PVB opened the Pub to the public, serving wine and the full range of PVB brews by the glass as well as craft brewed sodas. Fall of 2006 saw PVB become a fully operational brewpub and has since been described as:
"A historic wood & brick brewpub featuring cozy atmosphere, award winning craft brews, globally inspired food menu & frequent-family-friendly events.”

On tap at the brewery rather light and pale. A bit more hoppy and more bitter than I expected.

On tap at portneuf brewing. Pours out golden topped with a white head. Nose is grassy hops some sweet malts. Taste is more of the light grassy hop notes and a touch of cereal malt.

On tap at portneuf brewing. Pours out black topped with a small tan head. Nose is toast rich malts cocoa anise and a little coffee. Taste is more of the nice roast malt chocolate and licorice. This is the best offering from portneuf I have had.

On tap at portneuf brewing. Pours out amber topped with a small sand head. Nose is rich malts some pine and citrus hops. Taste is more of the pine citrus hops a caramel malt and some sweetness.

On tap portneuf brewing. Pours out brownish amber topped with a sand head. Nose is butter popcorn some light earthy hops and caramel. Taste is more of the butter earthy hops some grass and a caramel malt.

On tap at portneuf brewing. Pours out a hazy straw topped with a white head. Nose is toast wheat some citrus. Taste is more of the toasted malts some wheat lemon citrus touch.

On tap at portneuf brewing. Pours out pale amber topped with a small white head. Nose is grainy light honey sweetness and some floral hops. Taste is more of the light honey malts and some floral notes.

On tap at the brewery pours out brown topped with a small tan head. Nose is chocolate nutty roast malts some grain. Taste is more of the sweet chocolate roast malts and a little coffee.

Clear straw yellow with a small white head. Aroma and taste is grains and light toasted malts

Clear dark brown with a medium sized beige head, good lacing. Aroma of toasted malts, caramel and coffee. Flavors of caramel, malty, nutty and bitters
