33cl bottle from a trade with JefVerstraete, thanks! A clear golden beer with a white head. Aroma of mild sourish apples and pale malt. Taste of mid sweet ripe apples, sweet malt, some white grapes.

Couleur dorée, col épais et crémeux blanc-cassé tenace. Ce qui est toujours un plus pour une bière sortant de fût.
Arôme est bien parfumé avec une belle présentation des cépages - je note un léger fleuri rappelant la violette, léger fruits noirs avec un côté baies - framboises
Palais est plaisant - belles notes de vin avec une rondeur fruitée avec une puissance fruitée apportant une certaine douceur en fin de bouche tout en gardant des notes boisée - malts de la bière de base.
Niveau fruité, je note une petite rondeur framboise et un apport de mûre. Petite sensation de chaleur en fin de bouche. Une fois que la bière décante qcq minutes - les saveurs s'ouvrent nettement plus.

Wheat beer in the Eaux Vives series from the province of Namur in French-speaking Belgium. Off-white, moussy, cobweb-lacing, slowly breaking and irregularly shaped head on a hazy apricot blonde beer, cloudy and more beige with sediment. Aroma of crushed green gooseberries, oxidized green apple slices, sorrel leaf, dough, old crumbling lemon cookies, freshly cut green bell pepper, cucumber even, lemonbalm. Softly sourish onset with sweetish core, hints of Granny Smith apple, Conference pear, green banana and a touch of gooseberry or kiwi, fizzily carbonated with smooth, supple body; old-bready malts with sourdoughy edge from the wheat - wheat tartness is very much played out here; bit herbal, floral, gently bittering hoppiness in the end, lemonbalm, sweetclover, pumpkin flowers, chamomile - as well as lingering bready yeastiness, which hinders the refreshing character somewhat. A bit unbalanced, but drinkable.

Spiced Walloon 'ambrée' from Romerée, a village southwest of Dinant in the Meuse valley; as an amateur entomologist, I could not ignore this one for its funny label alone. Thick, eggshell-white, 'Brugse kant'-like lacing, irregular and uneven-bubbled head on a cloudy copper-hued deep bronze robe. Aroma very herbal, reminiscent of anise, rosemary, lemon verbena, bergamot and even liquorice - clearly a lot of spicing was added here - next to old peanuts, cloves, bread crust, jute, tea, cold pea soup. Sweetish and sourish onset, the latter in a dull yet consistent way, seemingly pointing at onsetting infection; dried peach and banana peel notes, smooth peanutty and bread-crusty maltiness, rusk-like, remaining restrainedly sweetish. Quite a 'soupy' effect towards the end, cooked dark green vegetables, peas, kale even, but even this effect gets overruled by an overdose of herbality, again lemon verbena, aniseed and some liquorice, paired with a grassy hop bitterness. That sourish undertone remains till the end, even becoming very vaguely lemony, but largely absorbed by the sweetishness of the malts - it seems something went wrong here, this is not only overspiced but probably a bit infected as well, and the first may have been used to cover up the latter... Bizarre, I cannot say I enjoyed the beer as much as I enjoyed the label, I'm afraid.

Ambrée, col fin crémeux blanc-cassé.
Arôme est de suite surprenant - épicé virant sur l'anisé, voire de bergamote rappelant un léger 'cola' plus une épice de poudre de clou de girofle voire un peu 'speculoos'. Le tout sur des effluves de malts torréfiés.
Palais est plaisant avec une belle approche des malts, entre biscuité, grillé, caramel, légère touche de sécheresse rehaussée de suite par une touche épicée qui apporte une sensation de fraicheur en bouche avec une fin vers le citronné-agrumes.
Plaisante, pourrait certainement bénéficier d'une belle mise en fût de rhum.

Bouteille 33cl, BB 01/2023, lot# B002. Bière qui se veut dans le style lambic - in fine, c'est plus une affaire de brett se rapprochant de DLS que de lambic.
Dorée, col blanc très fin disparaissant vite.
Arôme sur un bouquet fruité pêche, fruits verts, pas mal de brett - je suppose ? léger funk, douceur en rétro avec une petite pointe de grains.
Palais est sur une belle acidité, avec un côté pomme verte, pêche voire abricot. Brett avec un fruité rappelant la groseille à maquereau voire mirabelle. Le fruité est bien mis en avant par une effervescence fine mais rehaussé par un côté funk acidulé plaisant qui s'entrechoque avec une touche de douceur fruitée.
