Wicklow Wolf was established in late 2014 after the meeting of two likeminded friends with a common interest in good beer. Quincey Fennelly and Simon Lynch both fell in love with craft beer while living in California for many years. Setting up a brewery together was always inevitable.

330ml can at School of Animals, Kuala Lumpur. Poured a slightly hazy golden colour with a thin white head. The aroma is malt, cardboard lager yeast, light woody hops. The flavour is moderate bitter, with a crisp, slightly light, watery, light citrus, woody hop bitter palate. Medium bodied with average carbonation. Improved as it warmed.

330ml can from Paus Craft Beer Bar, Kuala Lumpur. Poured a hazy golden straw colour with a mostly lasting frothy white head. The aroma is grainy malt, light citrus fruit hops. The flavour is light bitter and sweet, with a light, watery, fake boiled sweet like citrus, light mineral, light floral, super light hop bitter palate. Light bodied with average to soft carbonation. Like drinking flavoured water. Did they use hops at all or just adjuncts. Truly awful. As a brewer I would be ashamed to see this leave my brewery. I’d seriously rather be drinking Carling. Beers like this give craft beer a bad reputation.

Can from www.drankgigant.nl webshop, Vlissingen, Netherlands and consumed at home. Had this Wednesday 28th April 2021 in evening after a cycle to Haindfling to get milk, listening to watching a film on Netflix. Pours black in colour with an off white head. Light coffee on the nose and some chocolate. In the mouth similar, coffee, chocolate a little heavy on the lactose, smooth and creamy textured moutheel. It's quite good, I'm just a little bit

Cloudy yellow with a medium head. Aroma of mango hop. Flavour is soft tropical fruits, mango, passion fruit, dusty hop grapefruit finish.

330ml can from Beer52: BB 21st Jan 2022. Last beer of six in a mini tasting with myself at home on 9th Apr 2021. Very black body, decent tanned crown on top. Roasted and toasted malty nose and taste, not as 'Peat Bog' as I expected. Nice easy finish to me evening drinking.

Le Sorachi Ace est la petite fantaisie de cette Wildfire, de la brasserie Wiclow Wolf qui nous la définit comme une Hoppy Red Ale. Sans cela, nous serions sur une ambré plate, sans grande intensité et avec un alcool à 4,6 % ne tenant pas la longueur. Mais à cause d'un malt peu forcé, l'amertume est relativement bien mise en avant et la dénomination Hoppy Red Ale pas réellement usurpée (et ce malgré 28 d'IBU). L'ensemble reste cependant gentillet. En verre nous sommes sur une robe bronze et limpide. Une mousse beige nappe juste la surface. Au nez, nous sommes sur une alliance caramel, orange un peu sûre (nous retrouvons bien le Sorachi Ace) le candy et une pointe de chocolat. En bouche nous savons le même cocktail appréciable, mais l'ensemble manque de caractère, d'intensité et de corpulence. A tonifier.

Tap at Craft Beer Rising, Old Truman Brewery, Brick Lane, London Feb 2018. Pours clear reddish brown with a creamy off-white head. Aroma: malty, grains, caramel, spicy hints. Taste: light sweet & moderate bitter, malty, fruity caramel, lemon, grapefruit, herbal. Medium body with moderate carbonation.

Easter Sunday 2021, 4th April; mega session at home. 330ml can via Beer52; BB 21st Jan 2022. Drank by myself, no sharing! Golden/amber body, white topping. Citrus front to the hoppy nose and taste, there are also floral notes in the aroma and a piney hop presence in the flavour, decent malty base for the hops to play on too. Nice.

Can sourced from Hoptimaal and shared at home (28/03/2021) - hazy golden amber with a white head. New Brewery and region tick âś… and what a bad first impression. Massive gusher!!! on opening, what little remained was vague non descript fruity with a weird chemical medicinal aroma and taste, metallic notes, total drain poor.

Il y a des Mammouths qui ne sont pas d'un autre temps. La brasserie Wicklow Wolf nous présente ici un beau savoir-faire pour une West Coast IPA à la fois racée et aromatique, bien servie par un houblonnage à cru et ses 5 houblons (Strata, Simcoe, Cascade, Chinook et Eureka) sans perdre de la lisibilité (ce qui peut être le cas en multipliant le nombre de houblons) et tout en conservant une bonne complexité. Et ce n'est pas l'alcool, qui, pourtant ne s'élève qu'à 6,2% fait défaut en se montrant à la hauteur et soutenant très bien la structure. Le visuel est très honnête, avec un blond orangé légèrement voilé surmonté d'une mousse blanc cassé d'un cm. Le nez est très sympathique, racé et agréable sur les herbes, le pamplemousse, l'ananas et l'orange. L'attaque est splendide, vive, intense, d'une bonne complexité et un cocktail très appréciable d'herbes, d'orange amère, de pamplemousse et d'ananas. Le houblonnage à cru est très efficace, l'amertume à 60 d'IBU bien pensé et le sucre parfaitement dosé. La deuxième bouche est sur la lancée, sans faiblir. L'arrière bouche est racée avec un alcool qui renforce l'amertume. Le final, bien que moins complexe, est sur une bonne amertume, toujours bien relevée parle houblonnage à cru. Très belle IPA.
