Description
Wicklow Wolf was established in late 2014 after the meeting of two likeminded friends with a common interest in good beer. Quincey Fennelly and Simon Lynch both fell in love with craft beer while living in California for many years. Setting up a brewery together was always inevitable.

Cask - Pours a clear red amber colour with a small foamy beige head. Aroma is malty, caramel, roasted grain and fruit. A light riasted malty grainy taste, caramel, ripe fruit flavours with a hint of chocolate. A slightly astringent herbal hop bitterness in the finish.

Keg at brewdog Edinburgh. Pours golden orange, nose is sweaty, floral, toffee, taste is sweet toffee, grassy, musty, light fruit.

Bottle from McHughs. Orange amber with a solid head. Aroma of tropical fruit. Flavour is lemon hop, a little toffee, bitter fruit finish.

Bottle from McHughs. Brownish black with a tan head. Aroma of chocolate malt. Flavour is chocolate malt, toffee, creamy with a sharp sweet bitter finish.

Bottle from Martin’s. Dark amber with a thin head. Aroma of sticky malt, orange malt, lots of heavy hop, heavy fruit booze, jam finish.

Can from McHughs. Light blackcurrant with a minimal head. Aroma of dark fruit. Flavour is light fruit, dry bitter bread, flavour really grows, dry salty finish.

Blonde, hazy, bubbly white head
Aroma of light citrus, very light zest. slight lemon
Taste of soft citrus, very light zest, dab of orange, sour note
Palate - Medium carb and body, soft sweet, alcohol well hidden. Finish light citrus, soft sour fruits
Overall - Disappointing considering the interesting ingredients in the beer

Can from McHughs. Cloudy lemon with a thin head. Aroma of lemon wheat. Flavour of wheat grains, malt with a citrus base. Finish is tart fruit, a little bitter dry finish.
