Description
Wicklow Wolf was established in late 2014 after the meeting of two likeminded friends with a common interest in good beer. Quincey Fennelly and Simon Lynch both fell in love with craft beer while living in California for many years. Setting up a brewery together was always inevitable.

Bottle shared at the JK tasting in London. Cheers! Pours black-brown with a big, beige foam head. Moderately sweet, with ample toasted bread, some dried fruits. Medium bodied with average carbonation. Decent balance in the finish. Nice one.

Farewell Bespin Bottleshare. Thanks to Leighton. Light haze on this gold beer, good pale cream colour head. Palate is airy and dry with decent fine carbonation. Light dry malts, mildly sweet. Tangy floralness. Light tangy citrus. Orange peel. Hop spice and mild pine. Dry bitterish finish. Not too bad.

Bottle shared in London - cheers! Pours clear gold with a creamy white head. The nose holds rindy citrus, dry pale bread, melon. Light sweet flavour with sugary pale bread, tangerine, meringue, low bitterness. Medium bodied with fine carbonation. Lightly bitter to finish, simple pale malts, white bread, lemon rind. Uninspiring but OK.

Bottle shared at Leightons place, 19/01/2017. Many thanks to Wingman Dave for this one. A light hazed golden orange coloured pour with a sticky white head. Aroma is wheat, lemon, rind, little pineapple. Flavour is airy, light grains, straw, spicy citrus, grainy. Palate is frothy, grainy, moderate carbonation. Grassy dirty hop.

Bottle shared at London tasting, October 2016. Black. Heavy roast and charred grain, some sugar as well. medium palate. Pretty standard porter, which is fine.

High Wycombe House Warming. Thanks to Wingman. Hazy deep gold beer, tidy pale cream colour head. Palate is airy, dry and has decent fine carbonation. Smooth malts, trace of dry cream. Light sweetish floral mid. Mild sherbetty candy fruits. Light finish, Interesting but probably not what was intended.

Bottle shared at the hi wy cum. Tasting, 5/11/2016. A hazed caramel amber coloured pour with a a thin white head. Aroma is semi sweet toasted malts, piney malts, subdued, little piney wood. Flavour is composed of woody piney, toasted, raw malts, dirty piney needles. Palate is semi sweet, highish carbonation, little woody. Maybe a little oxidised.

Bottle at Colin’s. it pours lightly hazy amber with a medium white head. The aroma is bitter - sweet, piney, resin, varnish, sticky, toffee and grass. The taste is crisp, dry, earthy, wood, resin, chewy malt, spicy, floral and soap with a dry finish. Medium body and average carbonation. Not the greatest.... dirty.

Can at The High WyCum tasting, Chez Bois, thanks to Wingmane 05/11/16. Hazed orange amber with a decent off white covering. Nose is light floral, melon, straw, biscuit, toffee. Taste comprises light hop, straw, grains, biscuit, toffee. Medium bodied, fine carbonation, semi drying close. Ok amber with a light hop flicker.
