About
Wicklow Wolf was established in late 2014 after the meeting of two likeminded friends with a common interest in good beer. Quincey Fennelly and Simon Lynch both fell in love with craft beer while living in California for many years. Setting up a brewery together was always inevitable.

Aroma: Dusty fruits with light hops. Flavour: Fruity and malty sweet with bitter notes and a fruity sweet and ligtly bitter finish. Pours with almost all head. Colour: Amber with a fluffy white head.

Frothy white good mostly lasting head. Yellow colour. Light malty and hoppy aroma. Light bitter flavor. Short light bitter finish. Watery palate.

Bottle @ Højbjerg tasting. Nice head with good duration. Color is golden. Aroma and taste are malt, hops, little fruits, grass and has a sweet malty finish.

Draught, half pint. @«The Big Grill Festival 2019», 17/08/2019. Slightly hazy golden colour with a minimal and disippating white head. Aroma is slightly tart and fruity. Taste is medium sour and soft tart. Refreshing. Next one please!

500ml bottle: BB 27th Jun 2020. Poured into a UK pint sleeve glass at home on 3rd Oct 2019. I allowed the sediment to leave the bottle, so my copper bodied beer had a hazy glow to it, the head a smooth white blanket of foam. Hops rule the nose and taste with both a piney and citrusy aromas and flavours. Light caramel like balance, but the finish is bitter and fairly dry in nature. Nice!

Tap at Searson, nose is quite fruity, citrus, orange, grass. Palate is quite bitter, some citrus. Sadly a bit old.

(On tap) Hazy amber golden with dense white head. Aroma of pine and stone fruit. Medium body with good carbonation. Rather a thin taste. Citrusy with pepper notes. Subtle biscuit malt in the background. Pleasant enough

500ml bottle: BB Mar 2020. Drank on 7th Sep 2019 while at dock in Dublin. Slight haze to the golden pour, white head. Hoppy with a citrus leaning in both the aroma and taste, mild malts somewhere in the mix too.
