Description
Wicklow Wolf was established in late 2014 after the meeting of two likeminded friends with a common interest in good beer. Quincey Fennelly and Simon Lynch both fell in love with craft beer while living in California for many years. Setting up a brewery together was always inevitable.

Bottle sample at a tasting at Max’s place. Thanks Tom L. Black with a quickly-diminishing tan head. Aroma of chocolate, alcohol, a bit of dark fruits. Sweetish and slightly sourish flavor with roast, chocolate, dark fruits, a bit of alcohol. Medium-bodied.

Bottle from Daly’s Drinks, Boyle [261215]
Orange amber, very hazy, frothy fluffy white head
Aroma of sweet citrus fruits, orange, apricot, sweet peach, lots of fruitiness, very good aroma
Taste of sweet peach, sweet citrus fruits, bitter zest hops, some sweet caramel malts, bitter orange zest
Palate - High to medium carb, needed swirling to get rid of excess carb, medium body, sweet malts, rather bitter, drinkable for abv. Finish as main flavour, slightly dry, sweet orange malts, bitter zest
Overall - Lots of fruits in here. It’s over carbonated and the malts a bit heavy, but it’s the best beer I’ve tried from this brewery so far

Bottle from O’Brien’s, Athlone [211215]
Black, big frothy tan head
Aroma of coffee grouds, big roasted coffee, fresh espresso, nothing else
Taste of good quality espresso roast, some dark sweet malts underneath, simple flavour
Palate - Soft carb, medium to light body, seems rather thin, soft sweet, bitterness from coffee roast. Finish as main flavour
Overall - Good quality fresh coffee flavour in this but underlying malts seem thin. Not enough malt to back up the coffee and needs more body. Rather one dimensional

Bottle from O’Brien’s, Athlone [151215]
Amber, slight haze, frothy white head
Aroma - Very fruity, sweet grapefruit, tropical fruit, sweet citrus, good nose initially
Taste of fruity malts, more caramel as it warms up, tropical fruit, grapefruit, citrus hops, fairly hoppy, some nice fruit in there, not overly malty
Palate - Medium carb and body, soft bitter, some sweet malt, texture a tad powdery, not completely clean. Finish as main flavour, soft bitter citrus.
Overall - One of the better beers from this brewery so far I’ve tried

Fraught at the Headline. Hazy orange with a solid head. Aroma is passion and orange fruit. Flavour is fruity grain, syrup, sweet grain and biscuit finish.

Bottle from Martins. Dark brown with a tan film of head. Aroma is coffee. Flavour is wood, coffee, dry caramel, fruit on a dry roast finish.

Bottle. Pours a black color with a small tan head. Has a roasted malty chocolate aroma. Roasted malty chocolate flavor with hints of caramel. Has a roasted malty chocolate caramel finish.

Draught at ICBF2015. Hayz orange with a full head. Aroma is mango and tropical fruit. Flavour is bitter, chalky hop, fruit with a light sour bitter finish.

Bottle from McHughs. Ruby brown with a firm head. Aroma is fruit, yeast and malt. Flavour is cherry, spice, a little ash. Smoky finish.
