Absolutely crazy and absolutely delicious thyme character. Needs to warm up and get some air but once it’s does this is one of the most intriguing and definitely tasty lambics I’ve ever tried.

Lovely apple character with a very nice hint of cherries. Intriguing tartness I haven’t really had in a cider before. Very much like it and I suspect it’s due to the cherries.

0,375l from bottle at Sanders, shared by Sander, big thanks. Bottled 30.01.2021. Reddish color, small pink head. Smells green apples, funky, oak, cherries, marzipan, very nice smell. Full body, soft carbonation. Tastes of cherries, citric, grassy, marzipan, some apples, light sweetness, light oak. Finishes lightly dry with notes of apples, cherries and marzipan. Very very nice one,

Bottle thanks to Leo. Pours a cloudy yellow with small white head. The aroma is pear, apple, mineral, floral. Slick body, green apple, mineral, light tartness, very good.

Golden. Superb quince jelly nose. Bit more dry body, skins, jelly, juicy, pear, dry finish, amazing

Raspberry lambic ('framboise') flavoured with rosemary, sample at Wild in Groningen. Thin, open, off-white, small-bubbled head on a cloudy tomato juice-like red beer with mauve-ish tinge. Strong aroma of indeed fresh rosemary, lots of red raspberry too, tomato juice, parsley, Bloody Mary even, lime, white pepper, sour apples, yoghurt. Very fruity onset, lots of raspberry acidity mixed with lactic sourness, tomato note, sour apple and red berry impressions, softish carbonation; supple body, a slender bready backbone completely soaked in fruity, juicy, tart raspberry and lambic acids, woody note, lots of 'floweriness' growing into strong rosemary herbality with very 'mediterranean' effect. Original, quite easily drinkable if you are into lambic like myself, with a peculiar Bloody Mary-like effect, coming from the tomato-like aspect of the raspberries mingling with this 'green' herbality from the rosemary... Enjoyable and quite unique, if this is the level of flavour this Pellicle project - founded by an old Bruges acquintance - achieves, then I must find more Pellicle beers, challenging as that may be in view of the very limited production.

This happily surprised me! Never realized raspberry and rosemary would pair so well both in language and in taste. Nicely sour, raspberries, and plenty of rosemary. Quite herbal, pretty dry, but it all works amazingly well.

Pale pinkish ochre-yellow cider. Faint apple; peaches, crabapples. Bit dullish flavour, somehow spicy, garden herbs. No carbonation, medium body. Not very cidery, nor hoppy as a dry-hopped beer would be. Flavours seem to annihilate each other somehow.

Thick, fast gone cyclamen head over veiled deep red beer. Intense cherry nose, but the thyme comes out unashamedly. Cherries (both sour and sweet) and again the thyme returning. Wild yeast features. Very fruit-slick, not very carbonated. Excellent kriekenlambic.
