About
In the Spring of 1992, my father, Pierre Celis, flew from Belgium to the United States to start a new brewery in the great state of Texas. No one suspected that he carried something very precious, concealed in his tube socks. It was the original yeast strain Pierre had been using to brew his world-famous Belgian-style Wit beer for the past 30 years. And there was no way he was going to brew without it.

The first Celis Brewery opened on July 11th in 1992. It was an immediate success. Turns out Texans really liked our beer! Before we “crazy Belgians” arrived, most Texans were drinking one of “the big three” brands on the market. The small craft breweries that we all know and love today simply did not exist. When Pierre Celis started brewing his beloved beer, he created a craft beer that changed everything.

Exactly 25 years to the day it first opened, the legendary beer is back, better than ever at Celis Brewery 2.0. Along the way in the Spring of 2011, we lost my Dad. But Pierre’s spirit and his commitment to quality lives on—along with his original yeast strain.

Welcome to the future, the legacy, the celebration, and the beer that started it all. Welcome to Celis Brewery.

Admin Note: After the original brewery in Austin closed the Celis brand was purchased by Michigan Brewing Company and brewed in Michigan for a decade. Then contract brewed at Two Roads.

Has a lighter, pale straw color, moderate cloudiness. Good amount of white head and a crisp lemon/orange aroma. Tastes of lemon and coriander, with some bitter orange notes and even some yeast flavors. Has a medium body and a very even, fresh flavor. The balance on this beer was wonderful, and it was able to provide ample flavor, while not being too heavy. Has the usual clove and banana but it is not overpowering. Not as much yeast or flavor as Oberon, less sweet and more balanced than Whitsun, alot like a Hoegaarden without the candy sweetness and huge coriander flavor. I thought this beer had a perfect balance between some of the heavier wits out there and some of the flavorless/watery ones. Very refreshing. Rerate. Bottle. Maybe it's just because I'm trying an older bottle versus my previous summer tap experience, but this isnt quite the same, a more sour old flavor, less body and a muddled light banana/clove flavor. Not as impressive, but I'll try it again next summer.

Rich appearance followed by a bland beer. Replete with puckering tang (not as much as a few other weak examples), but the malts leave something to be desired. The body is too thin, and the flavor too fleeting, for this to be considered a good example. Shiner Bock it isn't, though, and that's a good thing.

Pours a light straw-yellow color with a thick, white head. Aroma is coriander and banana, and the flavor is a nice medley (I thought I'd never use that word...) of bananaesque esters, yeast, coriander, and orange peel. These witbiers sure are refreshing. They are like the wine coolers of the beer world...

A light yellow unclear beer with very little head. It has a very nice aroma of wheat. The flavor is that of wheat malt with a slight bitterness.

GABF 2002: Very pale white color. Definitely the palest beer I've ever seen. Light spicy aroma, hint of lemon. Notable phenolic band aid aroma and flavor. Light spicy, and almost bland. A true disappointment.

As i like white beer, i certainly like Celis White. Compared with the Hoegaarden series, this beer has a fuller taste. Also see my rating of Celis White (belgian).
