In the Spring of 1992, my father, Pierre Celis, flew from Belgium to the United States to start a new brewery in the great state of Texas. No one suspected that he carried something very precious, concealed in his tube socks. It was the original yeast strain Pierre had been using to brew his world-famous Belgian-style Wit beer for the past 30 years. And there was no way he was going to brew without it.
The first Celis Brewery opened on July 11th in 1992. It was an immediate success. Turns out Texans really liked our beer! Before we “crazy Belgians” arrived, most Texans were drinking one of “the big three” brands on the market. The small craft breweries that we all know and love today simply did not exist. When Pierre Celis started brewing his beloved beer, he created a craft beer that changed everything.
Exactly 25 years to the day it first opened, the legendary beer is back, better than ever at Celis Brewery 2.0. Along the way in the Spring of 2011, we lost my Dad. But Pierre’s spirit and his commitment to quality lives on—along with his original yeast strain.

Admin Note: After the original brewery in Austin closed the Celis brand was purchased by Michigan Brewing Company and brewed in Michigan for a decade. Then contract brewed at Two Roads.

Bottle. From old notes. With herbs and spices, by the original maker of Hoegaarden. Very similar to Hoegaarden Grand Cru, but not quite as good. Not as rich and malty, the flavor just is not up to the other, although it is a pretty pleasant beer.

Top-fermented bock with cristal malts and Whitbread yeast, apparently. Tasted as old beer. Creamy head, deep brownish amber colour; fruity and malty aroma, caramel, honey, lightly spiced; taste malty, rounded, soft and sweetish, bit honeyish, mild spices, dry finish.

Draft. Medium gold, light head. Weak yeast influence, some coriander, hints of malts and hops; not watery but not full flavored either. Okay.

Bottle: Pours cloudy, light gold, tall white head with a very slight pink tint..... Hyper-foamy, even with a careful pour....and the wait is not worth it. Imitation, watery raspberry aroma...stale....wheat. Taste is flat, lifeless and watery....."raspberry" A little musty....almost tart, but the water dumbs even that down...like a raspberry flavour packet added to a bad ultra-light beer.... not good.

Bottle: Pours clear, amber, with a short tan head. Caramel, breadheel aroma. Taste is flat cola, light malt, caramel. Nothing overtly bad, just very dull and bland.

Very light, clear, pale gold with a frothy white head. Very little aroma....yeasty. Mild...a slight nutty tone over the yeast.... A hint of white pepper. Light, but still pretty nice.

Bottle. Light barley malt and alcohol aroma. Pale yellow with moderate head. Lightly sweet lemon malt and yeast aroma. Nutty finish. Very light - nothing bad but not much there.
