Description
In the Spring of 1992, my father, Pierre Celis, flew from Belgium to the United States to start a new brewery in the great state of Texas. No one suspected that he carried something very precious, concealed in his tube socks. It was the original yeast strain Pierre had been using to brew his world-famous Belgian-style Wit beer for the past 30 years. And there was no way he was going to brew without it.

The first Celis Brewery opened on July 11th in 1992. It was an immediate success. Turns out Texans really liked our beer! Before we “crazy Belgians” arrived, most Texans were drinking one of “the big three” brands on the market. The small craft breweries that we all know and love today simply did not exist. When Pierre Celis started brewing his beloved beer, he created a craft beer that changed everything.

Exactly 25 years to the day it first opened, the legendary beer is back, better than ever at Celis Brewery 2.0. Along the way in the Spring of 2011, we lost my Dad. But Pierre’s spirit and his commitment to quality lives on—along with his original yeast strain.

Admin Note: After the original brewery in Austin closed the Celis brand was purchased by Michigan Brewing Company and brewed in Michigan for a decade. Then contract brewed at Two Roads.

Bottle. Bread, citrus, and spice aroma. Hazy straw color, small white head. Flavor is sour citrus and wheat with a little spice in the finish. Light carbonated body.

Refrigerated bottle poured into a white wine glass. Pours translucent pinkish purple with medium light pink head. Some lacing, good carbonation, and medium body. Taste is slightly tart raspberry and wheat.

Bottle. Flowery raspberry aroma - hint of mustiness. Cloudy amber color with large head. Floral, lightly sweet raspberry malt flavor. Not bad - not as sweet as the typical fruit beer.

Sampled at Texas Beerfest. Pours a pinkinsh purple with a small white head. The aroma is rasberry fruit and tart. Thin mouthfeel with a rasberry flavor and a sweet finish. A decent fruit beer from MBC.

Bottle. Pours a clear amber with a small frothy off white head that leaves decent spotty lacing. The aroma is a bready malt with caramel. Thin mouthfeel with a light roast malt with caramel, raisin and brown sugar. Easy to drink with a spicy finish. A good Belgian from MBC.

Sampled at Texas Beerfest. Pours a pale golden with a small frothy white head. The aroma is yeast clove and banana. Thick mouthfeel with a dry clove and yeast flavor and dry finish. A decent wit from MBC.

12 fl oz bottle. Pours clear and golden yellow with a small white head. Aroma is mild spiced and light wheaty. Sweet, mild fruity and wheaty. Dry estery and slight spiced to phenolic finish. Ends dry.

Bottle 12fl.oz. [ As Celis Grand Cru (Celis Brewery) ].Clear light to medium yellow colour with a small to average, frothy, fair lacing, mostly diminishing, white head. Aroma is light malty, moderate yeasty, spicy, coriander, citrus notes. Flavour is moderate sweet and light bitter with a average to long duration, whaety, yeasty, spicy. Body is medium, texture is oily, carbonation is soft. [20110622]

clear yellow, smooth white head. yeasty, very dry, citrussy aroma. belgian. very nice flavor is yeasty, belgian yeast, dry yellow fruits.

Bottled. A light yellow beer with a thin lazing white head. The aroma has notes of lemon, coriander, and peaches. The flavor is sweet with notes of malt, alcohol, coriander, and lemons, leading to a dry alcoholic finish.
