Bottiglia. Arco olfattivo dominato dall'orzo tostato. L'olfatto viene stimolato in maniera normale e la maniera in cui permane è sufficiente. Il manto birroso superiore è caratterizzato da una schiuma non molto persistente. La parte liquida offre una visione offuscata. Il colore è ambrato. Il corpo è rotondo. L'amaro non è invasivo. La forza gustativa è normale e si prolunga in modo sufficiente. Le sensazioni boccali finali risultano di facile beva. Il retrogusto è di media intensità. Sul tetto della bocca si attestano note di sentori di caramello, miele, pane tostato ed erba.

Bottiglia. Il gusto al naso è indirizzato verso l'orzo. L'olfatto viene stimolato in maniera normale e il modo in cui permane è sufficiente. Il mantello birroso superiore ha una buona tenuta. La grandezza delle bollicine è medio-fine. Il liquido è di apparenza velata. Il colore è giallo dorato brillante. Il corpo è pieno. L'amaro è nella media. La forza gustativa è elevata. La continuità gustativa è buona. Il gusto è piacevole. Le sensazioni boccali finali risultano di pronta beva. Il retrogusto è di decente intensità. L'aroma in bocca porta i segni di miele, cereali, erba, agrumi e spezie.

750mL bottle, best before 8/31/16, drunk at Deep Ellum on 3/12/16.
Can’t find a single thing about this brewery online, other than an entry on Untapped, which is weird because Deep Ellum has carried this now for 4-5 years.
Anyhow, the bottle from the fridge is a massive gusher and pours a hazy amber-sunset with a large, well-retained, off-white head.
In the nose is light brett, mostly perfumey, light, very dry and with none of the band aid or tropical fruit you often get. Nectarine and other similar yeast esters abound, with a light toasted character and plentiful cereal, biscuit and other malt notes. Peppery phenols hang on the end with no alcohol or flaws.
Bready, with tons of varied malt/grain character in the flavor and very light on the brett, with pepper and tons of dryness. Probably some of the yeast was disturbed when the bottle gushed, adding light blandness and nuttiness. Bordering husky, though mostly just bland, with light crystal malt toasted character, a touch of orange rind and lemons and almost zero sweetness. Some oxidation noted. Clean, though. Could definitely use some more malt softness/suppleness. As is, it’s just a bit too dry and grainy. Carbonation is tight, obviously natural.
