We brew sake with great care in a blessed natural environment, using the subsoil water of the Naka River, a clear stream gushing from Mt. We have also secured a cave for storage and continue to take on the challenge of creating new sake flavors.

Glass at an Izakaya. Rather plain nose, some fruit, some alcohol, a bit of rice. Very dry and simple. Flavor also dry, light fruit, alcohol burn. It claims to be super dry, and it is, but this is too dry for me to really appreciate, and as it is undiluted genshu, it burns as well.

Glass poured form a 1.8 liter bottle. Hugely milky and cloudy, pasty, with rice matter. Thick and gooey. Milky vanilla nose, creamy. Full, thick body, vanilla and cream with hot alcohol coming up behind to clean things up a bit. Quite rich. Nice. 1 glass is enough though.

Glass from the 1.8. Spicy nose full of rice, and some estery fruit. Full rich body, grainy, spicy, sweet. Solid.

One cup at home ... milky white ... soft sweet floral rice ... oddly milky nose ... soft gritty ... some raw alcohol ... hint of pineapple ... soft coconut ... little bitter ... not working to well for me ... calky finish
