50belair Profile - Brewver (Dev)

Bottle enjoyed at Schloss Von Bishop. Clear golden pour with a white head. Cork blew out big time. Copious amounts of apple cider vinegar wafting from the bottle. Hints of apricot in the background. . It’s a sour bomb with loads of acidity. Taste is overwhelmingly apple sifter vinegar and stone fruits. The expected barrel, and vinous notes are nowhere to be found. It’s tasty but a bit unbalanced and lacking depth and structure. Perhaps a few years in the bottle will help. Side note, it did the tartness and acidity did mellow after some time in the glass. Also, the stone fruit and apricot notes started to come through more.

Bottle at Cantillon. Clear yellow pour with a white head. Slightly smokey nose. Sour with hints barnyard funk and smokiness and an almost artificial vinous finish. Good body and mouthfeel.

Bottle at Cantillon. Cloudy yellow pour with white head. Peppery nose. Loads of pepper with undercurrents of lambic. A real punch in the face but interesting. Good body and mouthfeel.

Bottle at Moeder Original. Clear dark yellow pour with s small white head. Smoke jumper / campfire bouquet. Tasty, nice funky sour notes that pair well with the smokey/peaty overtones. Good body and mouthfeel.

Bottle (no label) at Moeder Original on 4/24/26. Clear yellow pour with.a fleeting white head. Floral nose. Tasty and well balanced with barnyard funk and floral highlights. Good body and mouthfeel. Stunner.
