Our “San Diego Pale Ale.” Hop-driven from two key hops: citrus and pine from the wonderful and classic American Cascade, paired perfectly with the bright fruit and dankness of Australian Galaxy. With moderate bitterness and just enough malt backbone to elevate the hops, this Pale Ale is super-refreshing.
When it came to creating Ripper, we drew inspiration from the coastal surf cultures of SoCal and Oz. Sourcing classic Cascade from the Pacific Northwest and Australian Galaxy hops from…yes…Australia, we made a beer both lovers of frothy peaks and hoppy green buds will be stoked about. At the same time, we stayed true to our San Diego roots by pushing the hop boundaries of this style. While some might think it lingers on an edge far closer to an IPA, with all the dry-hop flavor and aroma, it’s actually right in line with the current-day interpretation of a West Coast pale. Ours just so happens to have an Aussie accent that’s cascading with a juicy amount of grapefruit and passion fruit hoppiness. So veg out or venture out. Either way, rip one open and taste this awesome golden nectar!

From a 12 oz. can. Pours a clear pale mahogany with an ecru head. Aromas are grass and citrus. Some sweet malt notes but the flavor is dominated by bitter citrusy hops. Decent stuff.

12 oz can. Clear light bronze pour with a light beige head and great retention. Fair lacing. Taste is all citrus/floral hops without getting too bitter. Very smooth. Pretty mellow for the style, especially for Stone.

Keg at Stone Berlin. A clear amber copper coloured pour with a lasting frorhy beige head. Aroma is grapefruit zest, spicy citrus, tobacco plastic,. Flavour is composed of semi sweet, tobacco, toasted malts, grapefruit zest, bitter lemon,. Hops are a little one dimensional. Palate is rounded, semi sweet, moderate carbonation. Maybe a little thin. Ok.

(2017 London) 1/2 Pint Keg @ Queens Arms (Kensington). Quite hazy orange, creamy white. Weirdly milky nose, spoiled citrus & mango, far too unpleasant milky. Taste is poor milky, thick orange, mango, weirdly grainy, quite a mess,… Milky grainy, harsh finish,… Quite a mess with lesser flavours, don’t know what happened here, Stone is usually great for me.

355ml can from Stone Berlin. Pours copper orange with a thick white head. Aroma of grassy hops, caramely malts, earthiness and hints of tropical notes. Taste is crisp, grassy and slightly grainy with some earthiness, herbal notes and tropical fruits. Finish is crisp, bitter and grassy with some hints of tropical notes. Okay, not very fresh.

Tap at Rotterdam. Clear copper colour, medium-sized off-white head. Harsh, bready aroma. Medium-bodied. Ryeish, malty, some citrus in the flavour. Stone fingerprints. Decent but probably lost its charm on the way.
