This mixed-culture Saison, the companion to our Point du Sable Saison, was fermented with wild yeast (incuding Brettanomyces) and bacteria in a warm environment. The resulting lemongrass, hay, and peppercorn notes bloom before giving way to a tart, dry finish.

Crowler shared by Adam, thanks! Pours a a near clear amber gold with a white head that dissipates to the edges. Aroma has light fruits and a bit of Belgian yeast with sweet grains backing. Flavor has light grains and a bit of fruit with some flora supporting.
