This blend, taken from 3 different batches brewed throughout 2020, incorporates a more varied malt bill than usual. Featuring a mix of chocolate, rye, wheat and smoked, this beer, which was also partially aged in a fresh Frederiksdal cherry wine barrel, provided a strong sour base. An exciting addition of 75kg of frozen Danish sour cherries started to bring the beer into focus, though it needed a bit of balance.
25kg of local Essex cherries add a bit of sweetness, and, after almost 4 years of ageing in barrel & bottle, we have a complex and interesting dark sour. Both cherries work together to give you balanced sweet and sour, with balsamic, tannin and smoke as it warms.

Bottle from the dregs run. Pours deep amber red with a thin pinkish head. Aromas of cherry stone, sour cherry and ripe cherry. Woody notes. Taste is more of the same. We'll balanced acidity.

Appearance - deep amber red. Light carbonation and thin head.
Nose - lovely cherry stone, sour cherry and ripe cherry. Woody backdrop.
Taste - more of the same, luscious cherry notes.
Palate - medium bodied and a great balance between fruit, tannins and acid.
Overall - wonderful stuff!
