2017 Vintage. In early September, when the hops we grow on our little field in nearby Chelsworth become ready for picking, we harvest the crop for use in our beers. The hop oils and aromas are all around us as we handpick each flower in the September sunshine. As a result we decided to brew a beer that will let these fresh green hops shine. Only our organically grown Suffolk hops and barley malt were used in this brew. The beer was primary fermented with a Saison yeast strain and then a secondary fermentation, in oak barrels, with our own locally collected wild yeast. The resulting beer is dry with a mouth coating of hop oils and pepper, orchard fruit flavours are at the fore, with more funky spice from the yeast on the finish.

Bottle shared with the KL tasting crew. Poured a hazy golden colour with a thin broken white head. The aroma is saison yeast, citrus fruits, pineapple. The flavour is moderate sour, with a light, crisp, fresh, juicy tart citrus, oaky, light spicy palate. Medium bodied with average to soft carbonation.

Bottle from Salt Horse. Pours a clear, still pale gold. Peppery and funky aromas, light pear note. Taste is vinous, white grapes, sour funk, white pepper. Shame it was flat, but quite tasty.

Bottle from Hoptimism. Crisp vinous aroma. Light and cloudy amber gold. Bubbly white translucent head. Visibly bubbly. Sour. Cat's bum lips sour. Suprisingly so, but I'm not complaining. More of a spicey Saison flavour lingers in the finish. Light and thin bodied. Fizzy carbonation. Long dry finish - it really does dry the mouth out. Good stuff.

Hazy, orange colored, medium- off white head. Aroma is of light malt, bit spicy notes, some citrus, plenty of fruits and wild notes. Taste is medium sweet malt, fruity and some spicy notes, wild and funky, medium bitterness, dry, moderate- sourness. Medium bodied, average carbonation.

330ml bottle online from Hoptimism. Pours hazed ple golden with no head. Aroma: tart fruit, white grapes, lemon, oakly vanilla, light funk. Taste: light sweet, moderate tartness, gueuze like green apple skin funk, lemon, oak. Quite light bodied, virtually no carb, oliy mouthfeel, dry tart fruity close.

Cask at Affinity. Pours lightly hazy orange-gold with minimal head. The nose has saltybsweat, lemon, wheat, soft funk. Light sweet flavour with moderate acidity, lemon, more sweat. Light to medium bodied with fine carbonation. Finishes with a little bracing acidity, more lemon and sweat, hints if boozy warmth. Not bad.
