In early September the hops we grow on our little field, in the village of Chelsworth, become ready for picking. The hop oils and aromas are all around you when handpicking in the September sunshine, so we decided to brew a beer to let these fresh green hops shine as well. Only our organically grown Suffolk hops and barley malt were used in the brew. The beer was primary fermented with a Saison yeast strain and then a secondary fermentation, in oak barrels, with our own locally collected wild yeast. The resulting beer is dry with mouth coating of hop oils and pepper, orchard fruit flavours are at the fore with more funky spice from the yeast on the finish.

On tap at BrewDog Liverpool. Slightly hazy, dark amber body with no head. Aroma: rustic hay and earthy funk from the saison yeast, lifted by a bright note of tart sour cherry. Flavor: gently tart upfront, peppery spice, a hint of clove, and light herbal undertones – blending into subtle notes of hay and leather. Sour cherry. Light-bodied with a thin initial mouthfeel.

Kindly shared by ratebeer friends at Manchester Beer & Cider Festival, KegStar Bar. Misty golden body, stable white head, spotty lacing. Moderate saison fruity smell, hints of citrus. Mild orange acidity and yeasty fruitiness to the taste character. Ends dry and semi tart. Okay cleanser. (Third day of the festival 24.01.2020).
