Time & Space is our passion beer project, utilizing old-world techniques employed within the lambic breweries of Belgium. This beverage is the culmination of beer produced in hand with what nature gave us on 3 separate brew days, each 3 years apart. Aged in oak barrels with only the wild yeast that inoculated it as it cooled overnight, we left the process to chance with no modern brewery controls. The barrels were each tasted this month and hand-selected to enter a magical blend of what we call Methode Gueuze, a blend of 1, 2, and 3-year-old lambic using traditional techniques of spontaneous fermentation.
