This is our unfruited lambic style beer and is brewed using Pilsner Malt, Unmalted Wheat and Virginia Hops that are aged for 3 years. The lambic is then fermented and aged for 12 months in Virginia Meritage and Chambourcin Wine barrels from Pollock Vineyards. The complex wine aromas are complemented by earthy flavors from the wild yeast fermentation.

Bottle, undated. Slightly hazy golden color, scant white edge head. Aroma of damp musty basement, vinous fruit. Taste is softly sour stonefruit with a lightly peppery edge, lightly tart and dry finish. A pretty good attempt on a style rarely seen in the US and in bottles.

Tap at the brewery. Pours only slightly hazy gold with a dusting of a head. Aromas of white wine - Chardonnay perhaps, a little dust, a little yeast. Flavor is very white-wine. A hint of dust and earth, yeast. Very interesting. Not sure I’ve ever had a beer quite like this. Carbonation is soft.
