This cider was made using the Stoke Red apple—a bittersharp with high tannins, deep golden hue, structured mouthfeel, vibrant acidity and complex aromatics. This cider was fermented spontaneously and bottled conditioned with raw local honey. It is unfined & unfiltered with a 6.0% ABV.

Bottle pour at Barmann Cellars, pours a hazy bright golden with a small white head. Aroma is complex, with lots of red apple skins, moderate tannins, and a touch of wild yeast. Flavour is very dry, somewhat muted, with light tannins, red apple skins, and a touch of champagne-like effervescence. Not as complex as some of their other products, as it’s a bit muted. But it’s nicely constructed.
