This bottle marks a first for us—our estate cider, naturally bottle conditioned with honey harvested from our own land. Fermented slow and wild, it captures the true character of our orchard, balancing bright acidity with gentle tannins and the subtle influence of the bees’ first season of work.
The honey lends a soft floral lift to the cider’s crisp apple back bone. Light golden bubbles bring it all together, creating a dry yet layered cider with a clean, lingering finish. A reflection of our farm’s full ecosystem.

2024 vintage. Bottle pour at Barmann Cellars, pours a clear blonde with a small white head. Nose is bone dry, with plenty of tannins, champagne-like effervescence, and crisp apple skins—not noticing the honey. Flavour has some fermented out honey, crisp apple skins, and light tannins. Dry, bright, and clean. Solid.
