Cross Fertilization is a Golden Sour with unmalted wheat and dry hopped with aged Summit and Ultra hops. We took a few elements from Lambic production to see how they would fair being implemented into our process! The result is an extremely interesting and delicious sour beer, with a great traditional farmhouse funk and balanced acidity.

Bottle. Musty hay, lemon, biscuit malt, and citric acid aroma. Slightly hazy golden yellow with small head. Minimally sweet lemon, biscuit malt, moderately sour citric acid/vinegar, and mildly bitter hay/orange peel flavor. Good body.

750 ml bottle into tulip glass, bottled on 9/5/2017. Pours slightly hazy pale golden yellow color with a 2 finger fairly dense and fluffy white head with good retention, that reduces to a thin spotty lace cap that lingers. Light spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big tart lemon, lime, orange, grapefruit, peach, pear, apricot, melon, red/green apple, white wine, hay, straw, herbal, grass, wood, pepper, wheat, cracker, light leathery/musty funk, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy/acidic yeast, citrus/earthy hops, and moderate pale malt notes; with great strength. Taste of big tart lemon, lime, orange, grapefruit, peach, pear, apricot, melon, red/green apple, white wine, hay, straw, herbal, grass, wood, pepper, wheat, cracker, light leathery/musty funk, and yeast earthiness. Moderate lactic tang/tartness and peppery yeast spiciness on the finish. Lingering notes of tart lemon, lime, orange, grapefruit, peach, pear, apricot, melon, red/green apple, white wine, hay, straw, herbal, grass, wood, pepper, wheat, cracker, light leathery/musty funk, and yeast earthiness on the finish for a good bit. Awesome complexity, robustness, and balance of fruity/funky/spicy/acidic yeast, citrus/earthy hops, and moderate pale malt flavors; with an awesome malt/tart/spiciness balance; and zero puckering/astringent flavors after the finish. Moderately crisp/clean finishing. Moderate increasing dryness from tart/spiciness and carbonation. Medium-high carbonation and light-medium body; with a very smooth and moderately grainy/acidic/sticky/tangy balanced mouthfeel that is fantastic. Zero warming alcohol for 6%. Overall this is an outstanding sour/wild ale! All around awesome complexity, robustness, and balance of fruity/funky/spicy/acidic yeast, citrus/earthy hops, and moderate pale malt flavors; very smooth, crisp, clean, and refreshing to drink; with the modestly lactic/tangy finish. Apparently they tried implementing some Lambic elements into their fermentation process with this. Fantastic well rounded Brett complexity and nice dry hop presence; not overly lactic with nice malt backing against acidity. A highly enjoyable offering, and amazing style example.

Bottle shared by Yaniv, thanks! Pours a hazy earthy yellow with a whit head that dissipates quickly to the edges. Aroma has earthy grass, citrus rind and with a bit of funk, oak and light grains backing. Flavor has lots of citrus rind and grass with a bit of oak, grains and pine backing.
