Ice Cider is a style of cider in which the sugars and flavors are concentrated through freezing - either through allowing the fruit to freeze prior to pressing, allowing the juice to freeze prior to fermenting, or in rare cases freezing the fermented cider itself. In either case, the first ice that forms is mostly pure water - and by removing this pure ice what's left behind is a concentration of all the apple goodness.
