Sparkling perry made from a blend of anjou pears and wild foraged forest pears. The anjou pears were sourced from 50+ year old dry farmed trees in White Salmon, Washington on the Columbia River. The wild seedling pears were sourced from secret places deep in the woods of Washington and Oregon. Produced traditional method, with an in bottle fermentation producing fine silky bubbles. Hand disgorged with no added sugars, retaining balanced sweetness with unfermentable sugars naturally in pears. Aromas of honeysuckle, white flowers, and biscuit. Notes of honey, red clover, and a hint of strawberry, with a dry finish.
