Crafted with Hendre Huffcap, Winnals Longdon, and Theilersbirne perry pear varieties. A bit of oak-aged Archive (another of Empyrical's perry blends) is blended into this latest vintage of Principle prior to secondary fermentation in the bottle. Finished in Methode Traditionelle (aka Method Champenoise) for a refined sparkle. The result is a resinous, semi-sweet perry with a botanical aroma and a highly refined flavor profile.
