Empyrical Cider's Inquiry is a dry, sparkling cider made with a blend of high-gravity American heirloom apples, dosaged with cryo-concentrated fresh quince juice.

The base cider blend includes Golden Russet, Spitzenberg, Winter Banana, and Ashmead's Kernel apples from Lonely Mountain Orchard in Ellensburg; and Porter's Perfection apples from the cider research center at Washington State University's Mt. Vernon Extension. The cider is bottle conditioned, disgorged, and then dosaged with the quince concentrate mae from Empyrical-grown quince.

Easily one of our favorite quince ciders every year, and the latest vintage (2024 fruit, released in early summer of 2025) is no exception!
