mpyrical Cider's Inversion is an elevated Pear Cider, and one of our favorite annual releases from Empyrical. The base cider is made from a bittersharp forward blend of cider apples, including Porter's Perfection, Spitzenberg, Golden Russet, and Winter Banana. After primary fermentation, the cider is finished a la Methode Traditionelle with an oaked perry blended together with fresh perry pear and comice pear juice.

Inversion III is the latest vintage of inversion (2024 fruit, released early Summer 2025). Each prior vintage has been amongst Empyrical's fleet of award winning ciders at the most competitive cider competitions in the U.S. We expect Inversion III to join the ranks during this year's award season.

Adam & Elizabeth from Empyrical craft their cider and perry blends with an immense amount of thought and careful attention to detail. The name of this cider is a perfect example of that.

๐Ÿ A bit of sediment common in any cider or perry made with traditionaly perry pears rests at the bottom of this bottle, and you're encouraged to gently invert the bottle to redistribute the sediment through the cider before pouring.

๐Ÿ In a world full of modern "pear ciders" made to taste like a basic dessert pear and void of complexity, Inversion flips the script. An excellent base cider, blended with a bit of perry pear.
