Empyrical's Abstract Cider is a single-varietal study of Harrison’s Cider Apple. Cryo-concentrated and barrel-aged for an imperial ABV of 12.1%, this cider has robust tannins and an intense focus on the famed heritage apple’s characteristic flavors of smoke, marmalade, pepper, spice, a bourbon cherry, and the last sip of an old-fashioned. This limited edition version of Abstract was finished off-dry in the champagne method.
