Made with table apples, just like our Modern Dry. We took the same wild fermented base, added some honey, and boosted the acidity. The honey lends it a bit of sweetness and body, while the acidity balances it out and gives it that bright and juicy “mouthwatering effect”. Poured from 500mL bottle in a PG motel, some sediment at the bottom of the clear bottle (2023 Harvest). Clear-ish blonde with no head. Definite underlying honey character, soft background fleshy apple. Comes together nicely, decent sipper.
