2nd Anniversary Imperial Stout - Double Barrel Aged

The base malt bill for Sin Nanna was the largest we’ve ever packed into our mash tun. It was a total mess—slow runoff, a nightmare to clean both mash tun and kettle—but the aroma and flavor during the brew day was absolutely incredible. Thanks to a few tried-and-true tricks, we pulled it off and hit exactly what we were aiming for.

Brewed to celebrate our 2nd Anniversary at Phinney Ridge, this Imperial Stout spent over a year in freshly dumped Kentucky Bourbon barrels, then moved into American Apple Brandy barrels that had also previously held bourbon. The thick, dark stout took beautifully to its new, second home, picking up a touch of sweet apple goodness and an extra bump in ABV.

The result is a rich, decadent stout—full of classic bourbon barrel character: vanilla, oak, and char—layered with warm spice and caramelized apple from the Apple Brandy barrels.

TCBW2026. Black colour, small head. Aroam is sweet liquorice, some chocolate, toast, sweetish-tart apples and mild vanilla along with some wood. Flavour is a blend of the same elements, in a rather nice way. Alcohol does push through a little bit, but not burning the gums. Good sipper.
