Saison Ale Fermented in Red Wine Barrels
Josh has held off using the word Saison to describe any of our beers until we had the time and resources to ensure plenty of time for oak fermentation with a broad blend of yeasts, including both saccharomyces and brettanomyces. This beer is a red wine barrel-fermented farmhouse ale inoculated with a mélange of yeast strains we’ve used across several prior projects. This beer will pour hazy and straw-colored and offer a multifaceted aroma and tasting profile while remaining refreshing and dry.

Bottle sample at the Funk Collective at BFS. Hazy amber color white head. Vinous aroma with stone fruit. Taste is fruity, light funk, tannins. Very tasty.
