Passion Project is our latest experiment: a combination of exotic ingredients and processes to create something crazy delicious and original. In addition to Brettanomyces, Saccharomyces, and Lactobacillus, this beer was fermented with Pichia—a yeast rarely found in beer. Carefully controlled, it can unleash intense tropical aromas and flavors. We added ginger, grains of paradise, and passionfruit to this farmhouse ale, aged it in oak barrels with cedar spirals, and dry-hopped it with Citra, Mosaic, and Galaxy hops.

Bottle to tulip.
Appearance: bright yellow to orange color with a subtle transparency about it and a finger's worth of white foamy head which dissipated nicely to leave a light lace
Aroma: passion fruit, coriander, sweet hay/grass, light lemon tart, sly funkiness, white grapes, and some Brett tones
Flavor: blends the prior noted aromas together in a great tart to sour to sweet character with a semi-dry finish of the passion fruit and white grapes
Texture: medium bodied, great sipper, smooth along the tongue, light tart/Brett stabbing the tongue as I expected it to
Overall: nicely done sour/tart fruit ale worth coming back to.

Bottle @ Home. Pours slightly hazy yellow with a white head. Aroma of malt, light sourness, yeast, brett, tart fruit, passionfruit, grapes. Flavor is light sweet, light sour, malt, yeast, mild brett, fruit, passionfruit, grapes, light lemon. Medium body, average carbonation, dry and light acidic finish. 061020

ABV: 6.5%. Clear light to medium yellow colour with a large, frothy - creamy, good lacing, mostly lasting, white head. Aroma is moderate malty, wheat, moderate yeasty, oak, passion fruit, grapes, funk. Flavor is moderate sweet with a average duration, tart, passion fruit, grapes, sweet fruit - sweet passion fruit, yeast - funky, barrel. Body is medium, texture is watery, carbonation is soft. Frothy white good mostly diminishing head. Yellow colour. Light malty and moderate hoppy aroma. Light bitter slightly acetic nice passionfruit flavor. Average moderate bitter slightly acetic finish. Oily palate.

Bottle @ Højbjerg tasting. Nice head with good duration. Color is pale yellow. Aroma and taste are rich hops, malt, grapes, white wine, wood and has a nice vinous finish.

Bottle @Saxo's. clear golden, white head. fruity flavour, passionfruit and a little brett. Juicy, fluffy mouthfeel. sourish passionfruit, some bretty dryness. lots of citrus and a little wood in the finish. Nice.

12.68 oz 2017 bottle. Aroma is Brett, SweeTarts, passionfruit, Band-Aid, funk, wood; ginger comes through faintly at first, but gets more pronounced as it warms, as does the cedar. Pours nearly clear golden with a thick pillowy cream-white head that lasts and lasts and lasts. Taste is mildly sour (5/10), lightly bitter and savory with flavors of the aroma. Highly carbonated foamy mouthfeel. Weird stuff, and I love the concept--just not 100% enthusiastic how it turned out.

Very unexpected taste after aroma. Aroma is Brett farmhouse, sweaty pit. Taste has some Brett but loads of passion fruit. Totally tropical taste.
