Passion Project is our latest experiment: a combination of exotic ingredients and processes to create something crazy delicious and original. In addition to Brettanomyces, Saccharomyces, and Lactobacillus, this beer was fermented with Pichia—a yeast rarely found in beer. Carefully controlled, it can unleash intense tropical aromas and flavors. We added ginger, grains of paradise, and passionfruit to this farmhouse ale, aged it in oak barrels with cedar spirals, and dry-hopped it with Citra, Mosaic, and Galaxy hops.

12.01.2019, 0,375l bottle @ home:
Nice fizzy-creamy mediumlasting head, hazy. Aroma is strange sour-ish fruity, overripe tropical fruits, brett, old lawn, minerals, soda powder, fruit stones, co2 stinging in the nose, berry skin, old citrus peel. Taste is slightly dry sour-ish mineraly, old citrus peel, brett, fruit stones, minerals, bark, leafs, old lawn, flowers, light malts. Medium bitterness, slightly harsh citrusy mouthfeel. Kind of disappointing.

375ml bottle. Yellow gold colour, white foamy head and aroma of funky, pichia horseblanket, passionfruit. Taste is sour, citrus rind, bretty funk, fruity passionfruit, pichia horseblanket, apricot and with earthy notes. Medium bodied, soft carbonation, dry citrusy tart sour finish. Interesting, quite drinkable.

Bottle. Hazy yellow-golden, white head. Huh, the yeasts rule the aroma, Brett's there, along with some non-Brett tartness. And that's all? The taste is nicer, full fruity touches to the tartness, good classic white wine, piney touches, quite drinkable, well balanced. Fantastic carbonation, just fluffy enough to carry it without being grating. Excellent sour, but not worth the price. But, then again, nothing is.

Bottle. (thanks Tom) Hazy golden/yellow with a small white head. Fresh with passionfruit, some funk and mild brett. Quite soft and easy to drink with a fairly mild tartness. A nice one.

On tap at Coalhouse Pizza, pours a clear blonde with a small white head. Aroma brings out light brett, with fresh passionfruit and some funk. Flavour is complex and deep, with loads of passionfruit and bretty funk interplaying wonderfully. Impeccably balanced with a dry funky finish. Excellent.

bottle. spilled over when opened. hazy yellow, white head. bretty and hoppy aroma. earthy woody note too. flavor is dominated by hop flavors, but also some cedar wood and malts.belgian or saison yeast, some bretty dryness, more delicate than most belgian beers, but could still pass as one. not very fruity, but whatever the flavor has, is very nice nevertheless.

375 ml bottle into tulip glass, bottled on 2/22/2017. Pours slightly hazy pale golden yellow color with a 2-3 finger fairly dense and fluffy white head with amazing retention, that reduces to a large cap that lasts. Thick foamy lacing clings on the glass, with a good amount of streaming carbonation retaining the cap. Fantastic appearance. Aromas of big tart/tangy passion fruit, lemon, lime, peach, pear, pineapple, green apple, papaya, mango, melon, white wine, guava, berry, citrus peel, peppercorn, ginger, oak, hay, straw, herbal, floral, grass, wheat, cracker, light leathery/musty funk, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy yeast, passion fruit, citrus/tropical hops, spices, wood, and moderate pale malt notes; with great strength. Taste of big tart/tangy passion fruit, lemon, lime, peach, pear, pineapple, green apple, papaya, mango, melon, white wine, guava, berry, citrus peel, peppercorn, ginger, cedar, oak, hay, straw, herbal, floral, grass, wheat, cracker, light leathery/musty funk, and yeast/oak earthiness. Light-moderate fruity/lactic tartness, fruit tang, and peppery yeast/oak spiciness on the finish. Lingering notes of tart/tangy passion fruit, lemon, lime, peach, pear, pineapple, green apple, papaya, mango, melon, white wine, guava, berry, citrus peel, peppercorn, ginger, cedar, oak, hay, straw, herbal, floral, grass, wheat, cracker, light leathery/musty funk, and yeast/oak earthiness on the finish for a good bit. Amazing complexity, robustness, and balance of fruity/funky/spicy yeast, passion fruit, citrus/tropical hops, spices, wood, and moderate pale malt flavors; with a fantastic malt/tart/spiciness balance, and zero puckering/astringent flavors after the finish. Moderate increasing dryness from tart/spiciness and carbonation. Medium-high carbonation and medium body; with a very smooth, moderately crisp, and grainy/tangy/acidic/sticky/tannic balanced mouthfeel that is fantastic. Zero warming alcohol for 6.5%. Overall this is an amazing fruited sour/wild ale! All around incredible complexity, robustness, and balance of fruity/funky/spicy yeast, passion fruit, citrus/tropical hops, spices, wood, and moderate pale malt flavors; very smooth, crisp, and pretty refreshing to drink with the modestly acidic/tannic/spicy/drying finish. Never overly lactic. Glad I aged it for a bit. Amazing well rounded Brett complexity; with great balance of hops, spices, and wood; with a nice solid pale/wheat malt backing against acidity. A highly amazing offering.
