South African IPA
MayStay is our experimental IPA, and depending whether or not the result is good, it may stay or not. Brewed using roughly the same malt bill as Hammerhead, we use one bittering and one aroma hop, with the aroma hops being a hybridised South African variety.
The result is a well-balanced IPA with a distinct floral hop character and significant bitterness. Using only locally grown hops this is a beer that could establish itself as a typical local style over time.
Malts: Pale, Various Crystal malts
Hops: T91 Blend, XJA

keg at the brewery ...murky brown ...thin tan lacing ...soft sweet sweet caramel toffee fruit nose ...oily fruit ..big sweet floral hop
