Sour, salty, zingy — Dill With It is a pickle beer with bite. Inspired by a love of bold flavours and born from a three-way collaboration stretching from Michigan to Dromore, New Zealand to Belfast.
It started with a chat over beers with The Woodworkers at our taproom, Bullhouse East, and ended with Willetta of Bethels Kitchen bringing her next-level dill pickles to the brew day. Our sales manager Brent, fresh from New Zealand and new to the Bullhouse team, had the idea. Willetta brought the brine.
The result? A sharp, savoury sour that’s here to challenge expectations and start conversations. A beer for the curious, the adventurous — and the pickle lovers.

Nose is pickle juice, herb, tangy lemon back notes, damp cloth.
Taste comprises pickled gherkins, damp straw, herb, dill, modest acidic spike.
Medium bodied, fine carbonation, semi drying close with a light puckering bite.

Taster on tap at Uba ja Humal, Tallinn. Pours pale golden with a modest, white head. Smells and tastes like pickles. Someone fermented the water from the pickled cucumber jar? That's what it tastes like. Certainly not horrible, but not sure if I want that kind of beer....

I have no idea how to rate this, to be honest. For anybody reading this ahead of buying I must tell you: it REALLY TASTES OF PICKLE JUICE. There's more trad salty-sour gose flavours in there too but there is an unavoidable pickleness to it so if that's not your bag this won't be either. I'm landing on "I'm glad I tried it but I probably don't need to drink it again" I think.

Can @ home. I'm all in favour of experiment, but... Slechts wat schuim aan de rand, licht troebel, oranjegeel. Taksi. Dunne carbonatie, smaak blijft lang hangen, met name bij de onderkant en bovenkant van de wangen, zuur uiteraard, tannines, dunnetjes, zout en wrang. Niet mijn kopje. #noordIerland
