I confess that when assistant wine maker Kyla Evans suggested we co-ferment an Arkansas Black cider with ginger, I thought we might be ruining a great varietal. We tried it anyway and then decided to add a little bit of cinnamon and nutmeg for some festive overtones. It turned out great.
