Time Squeeze is a blend of two-year, one year, and six-month-old slightly acidic barrel aged Saison that was then cut with very young & vibrant Saison. Bottled in January 2022 and conditioned very peacefully for the last nine to ten months, Time Squeeze has developed complex notes of lemon rind, grapefruit pith, apricot, and pineapple that are met equally with soft vanilla and oak. Underlying all of this is the balanced barrel character with notes of wine must and funky Brettanomyces. What once was old is now new again.
