To create Analog Timepiece, we blended the intense citrus and pine of a West Coast IPA with the balanced, caramel maltiness of a classic East Coast IPA in one bicoastal package. Brewed with Pilsner, Dextrine and Crystal malts, Analog Timepiece was continually hopped throughout the hour-long boil with Warrior, Simcoe and Centennial hops. Then, for good measure, we dosed it with another blast of Centennial hops before fermentation with a classic English ale yeast. After a nice, warm fermentation, it was dry hopped with Simcoe, Centennial and Amarillo hops to layer in aromas of lemon, orange, grapefruit and spruce.
