Nature’s interpretation of the traditional (Champagne) method.
A pure, vibrant expression of the ancient, organically farmed orchards we foster in the Exe Valley and the rare apple varieties growing there. These include Devon Crimson Queen and Lord Lambourne, wild fermented and bottled with freshly pressed juice and wild yeast for secondary fermentation. After over two years of ageing on the lees to achieve greater complexity and texture, we hand riddle and disgorge each bottle and finish the blend with a drop of our Fieldfare Keeved cider.
The result is a cider of finesse and elegance, with crisp, fresh notes of Seville orange, grapefruit pith and ripe apple on the palate, complementing a nose of subtle cherry blossom and marmalade. We recommend serving ‘Natura Pastorum’ in your best wine glass and enjoying slowly, allowing its complex flavours to evolve. 750ml. 6%.

750ml wired cork bottle. Opened with a pop. Orange gold colour, thin white foam head and aroma of apple, fruit, earth, funk. Taste is tart, tangy, appley, fleshy, orangey citric note, alittle funk and chalky tannins. Medium bodied, fine carbonation, dry tannic finish. Very drinkable.
