Belgian Table Beer that was naturally cooled overnight in our rooftop koelschip then fermented and aged in red wine barrels with Brettanomyces for 13 months. Sessionable with delicate notes of oaky Chardonnay, berry, and pineapple. Bottle conditioned for 19 months.

Keg at the brewery, 8/6/16. Hazy orange, large foamy white head, good retention. Aroma of pale malt, brett, mild lime. The taste is pale malt, brett, mild spice and lime. Medium bodied, refreshing.

Draft at The Sovereign. Wild aroma, holy cow! Taste is huge earth and dust, light fruit. Amazing, especially at this abv.

Tap into a wineglass showing 3 fingers of clean white foam with well filtered yellow. The nose shows a lot of bretty funk and wild barnyard notes. The palate is well carbonated and full bodied. Light subtle flavors of balanced citric lemon with a subtle tartness. Moderate zest spice on the finish and another resurgence of the fruit on the linger. Slightly thin on flavor but accomplishes the saison style perfectly - well carbonated, flavored enough to let you know it’s there, and probably what I’d want at lunch if I was farmer and looking to work the rest of the day.

Draft: Brett, lemon zest, blue vein cheese aroma. Cloudy golden, thin head. Lemon zest, cheese, oak. Light body, moderate carbonation. Tasty, poundable, elegant. Brett really shows off. The whole industry needs more of this.
