This mead was created from a lot of raspberries and rapeseed honey.
During aging we added a ton of vanilla and backsweeten with phacelia honey. Finishing touch was made with ancho and chipotle peppers to give it a nice and complex yet moderate heat.
Expect a big vanilla punch followed by intense fruitiness and a spicy finish.

Bottle pour at WBF 2025, pours a clear dark burgundy. Aroma is rich, with tons of treacly, syrupy raspberries, intense jammy honey nectar, and a touch of vanilla. Flavour has rich raspberries, chipotle (without too much burn), rich honey nectar, treacly toffee, and vanilla. What a skilled and thoughtfully blended set of adjuncts in here. Wonderful.

Bottle pour at Warsaw Beer Festival 2025. Pours clear mahagony. Sweet honey and raspberries on the nose. Flavour has tons of intense, sweet raspberries, nectar, slightly floral. Fantastic.
