Seek the Wild is our wild ale series featuring strains of native, wild yeast we have isolated growing here on the farm. Each batch is unique but will always feature our wild yeast strains. ⠀ Batch #2 was brewed well over a year ago and spent many months in stainless and in our oak foeders. It was brewed with local Pilsner and wheat malt from our friends over @stonepathmalt and fermented with a mixed culture featuring our wild yeast, a clean farmhouse yeast, and two strains of Lactobacillus. It was then aged on over 350 pounds of apricots and local peaches from an orchard down the road before being bottle conditioned.
