Ale of Origin Gueuze is the latest edition of our spontaneously fermented South African Lambic.
This extraordinary beer was spontaneously fermented according to traditional Lambic methods: it was fermented with only with wild yeast blown in from the wind from the surrounding fruit farms into our “coolship”, a giant ancient wine tank in our historical cellar. After brewing a laborious, old world turbid mash of local raw wheat and barley, the wort was boiled for three hours with aged hops, then cooled overnight in the coolship. It was then fermented and aged in French oak wine barrels, followed by a careful blending of selected barrels. Gueuze is a blended edition of Lambic; this version is a blend of 5, 3 and 1 year old barrels.

[2019 vintage] 375mL bottle from the brewery. Pours cloudy gold with a white head. Oak, mildew, and some old furniture on the nose. Flavour is very oaky with lots of damp mildewy upholsery, some old wood. Great complexity and integration.
