This beer showcases Hourani, an ancient wheat variety recovered from the ruins of the Roman–Biblical era fortress of Masada in present-day Israel. Before the Roman siege, the city’s inhabitants buried these seeds for safekeeping. Recently revived by Elizabeth DeRuff and Honore Farm & Mill, it was grown organically and regeneratively in Northern California at Full Belly Farm—an early supplier to the famed Chez Panisse. Brewed as a Pilsner-style lager, Hourani is fragrant and complex, with notes of fresh straw, mint, and exotic spices. The palate is generous, with long length and invigorating energy.
