This beer was created using 2017 harvest organic 'blushing star' peaches from Rama farm in Bridgeport Washington. The peaches were refermented on unblended young open fermented spelt saison brewed in December 2017. This beer was an experiment in the subtle textural and aromatic changes of extended fruit maceration. After aging this beer was refermented in the bottle to condition.
