Key Lime Pie inspired mead with lightly caramelized meadowfoam blossom honey.
This project started with fresh Florida key lime juice and zest during primary fermentation. To combat the heavy acid and provide balance, we used Madagascar vanilla beans, graham crackers and backsweetened with a honey that provides a marshmallow texture and tasting notes.

Damn legit key lime pie, little bite of the lime but rounded out by the vanilla and graham cracker so well! The honey used also dominates the finish beautifully.
